This

Ingredients
1 pound boneless, lean beef chuck, cut into 1 or 2 inch
chunks
2 packages (2 pounds each) frozen mixed stew vegetables
1 can (8 ounces) low-sodium tomato sauce
1 cup fat-free, low-sodium broth
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon chopped garlic
Brown the
meat in a heavy-bottomed stewpot or high-sided frying pan
wiht lid over medium-high heat, turning meat several times
to brown on all sides. Add vegetables, tomato sauce, broth,
salt, black pepper, and chopped garlic.
Simmer the
stew partially covered for 1 hour, stirring occasionally.
Remove the lid and continue cooking until beef is tender,
about 30 minutes.
Alternatively,
after browning the meat, transfer to a slow cooker with
the vegetables, half the liquids, and the seasonings. Cook
the stew for about 6 hours on low.
