Diabetes Snacks, Treats & Easy EatsThis recipe is shown as low carb and low fat with 100 calories per serving. You will find more nutritional information on page 20 of the book where this recipe appears.

Ingredients
1/2 cup reduced-fat cream cheese
1/2 cup nonfat cottage cheese
1/4 cup shredded crabmeat or crabmeat substitute
24 wonton wrappers (see note)
1 egg white, lightly beaten
Nonstick cooking spray

Mix together the cream cheese and cottage cheese in a small bowl. Stir in crabmeat.

To assemble the wontons, set 1 scant tablespoon of filling in the center of each wonton wrapper. Brush edges of wrapper with egg white. Fold wrapper in half, making a triangular shape, and press along the edges, sealing dough. Set wontons on lightly floured nonstick cookie sheet until they are all assembled. Cover with plastic wrap to prevent drying.

Lightly coat a serving platter with cooking spray. Set aside, keeping warm.

Fill a medium saucepan half full of water. Bring to the boil. Slide half the wontons into water. Cook 1-1/2 to 2 minutes or until wontons are tender. Remove wontons with a slotted spoon an place on platter, keeping warm. Repeat until all the wontons are cooked.

NOTE: Traditional wonton wrappes are dough squares about 3-1/2 by 3-1/2 inches. Rounmd pot stickers are called gyoza. You might also find in the refrigerated section packages of wonton skins or egg roll wrappers in different sizes. All of these packaged doughs can be used to make pot stickers and wontons. Use a sharp knife or cookie cutter to cut the dough to the size or shape you desire.
