Although recent reports in the UK say that curry is now our national dish, Italian food has never lost its attraction for us either. With more people than ever going on holiday in Italy and some buying homes there, many people are now familiar and can identify regional dishes. In her introduction, Sandra Rosi says, "The recipes in this Florentine cookery book ranges from the original and traditional to more recent arrivals and innovations. Such a wide and occasionally unusual choice of dishes has not only provided some fascinating historical and social information, but the assortment and variety of flavours, colours, customs and costs suited to all pockets." This is borne out by the range of inviting recipes in the book. They include Florentine-style Sole, Roast Loin of Pork, Casseroled New Peas, Lenten Biscuits and Pine Nut Crisps. All seem relatively easy to prepare and most include some snippets of interesting information. For example, of the Pine Nut Crisps (in Italian Pinocchiati), the author says, "Sweet morsels such as pinocchiati, were a typical starter to meals during the Renaissance." The author doesn't neglect the basics either. She includes instructions for several kinds of tomato and other sauces, how to cook pasta and cold sliced meat antipasta. At the back of the book there is a fascinating chapter on preserves. Forget jams, in this short section there are recipes for preserving tomatoes, courgettes, mushrooms, artichokes and cauliflower. The book ends with a chapter on Tuscan wines. The book has lovely illustrations on every page from Paola Boldrini and is a good, practical size for use in the kitchen - it's not just a coffee table book and is definitely one for anybody who like Italian food and cooking.
