Ingredients
Butter-flavored nonstick cooking spray
1/4 cup skim milk
1/2 cup cocoa powder
1/4 cup reduced-fat margarine
1/2 cup sugar
1-1/2 teaspoons vanilla
2 eggs
2 cups sifted cake flour
3/4 teaspoon each: baking soda and baking powder
3/4 cup buttermilk
Position
oven rack in center of oven and preheat oven to 350 degrees
F. Lightly coat a 9-inch springform pan with cooking spray.
Line springform with aluminum foil and lightly spray again.
Scald milk
in a small saucepan over medium heat. Whisk in cocoa powder.
Cool.
Beat margarine
with sugar in a large mixing bowl with electric mixer until
light and creamy. Stir in cocoa mixture, vanilla, and eggs.
Sift flour
with baking powder and baking soda in a separate bowl. Add
the dry ingredients to egg mixture alternately with buttermilk.
Pour batter into springform pan.
Bake for
40 minutes or until toothpick or cake tester inserted in
center comes out clean. Cool on wire rack. Remove springform
sides and foil. Cut into 10 slices and serve.
